I got to meet little Lorelai she has the cutes pouty lips you have ever seen. Lorelai theme was buterflies. At first, she wasn’t too sure about smashing her cake.

VEGAN MANGO AVOCADO SUSHI

I can eat sushi every day!

Don’t be intimidated if you haven’t done sushi at home before. I promise you it’s not complicated and you will become a pro in no time. Sushi is perfect to make with your kids or for a fun date night dinner with your significant other. The best part making sushi at home is all the laughs when you get the sticky rice all over your fingers Or when your sushi roll doesn’t really look like a roll.The only requirements for this dinner is a bamboo mat and a fun attitude. I found out that Mia has some unexpected rolling skills.

The filling Im using is Avocado, Mango, Vegan Cream Cheese, And Sushi rice. I know that the ingredient combinations aren’t what you would typically order at a sushi place, But trust me they are an explosion of flavors. I got the Idea from @Therawboy on one of his IG posts.

DIRECTIONS ON HOW TO MAKE THE ROLLS

  1. Combine the rice and water and cook, To cook fallow the instructions on the bag. Fluff with a fork after it is cooked.
  2. Clean, Cut, and Prep the filling ingredients for the rolls and set aside.
  3. Transfer the rice to a bowl dont let it cool down for a few minutes.
  4. Glossy side down of the Nori sheet, onto bamboo mat and press a handful of rice onto the sheet.
  5. Add the toppings to the bottom of the sheet.
  6. Tuck and roll the nori Using the bamboo mat. Once rolled, gently press and shape the roll.
  7. Using a sharp knife to cut the sushi.
  8. served with soy or tamari sauce.

LUCY IS ONE

Sweet Luciana has grown so much since our last session!! She was full of personality and smiles for her cake smash session. Lucy’s Cake smash theme was modern bohemian wearing a white lace outfit and a pink flower crown. Getting messy wasn’t a problem for lucy we had so much fun watching her get into the cake. I hope you enjoy her birthday pictures.

ONE DAY IN SAN JUAN COSALÁ

Chapala really is a beautiful little city surrounded by magical little towns or pueblos, We keep coming back to San Juan Cosalá whenever we visit Chapala. San Juan Cosalá is about 25min from Chapala, The reason why we love going to San Juan Cosalá is that it has a few hotels that offer natural hot spring pools. It was Mia’s first time ever in San Juan Cosalás hot springs.

Mia and I stayed at the same hotel my parents used to stay when I was Mia’s age, Hotel Balneario San Juan cosalá. As a fair warning, The entrance to use the hot springs pools are a little expensive but for just a little more you can get a room and the entrance to the pools are included. The Hotel also offers adults-only area if you’re not traveling with kids. The hotel also has a spa that will bring you back to life.

 

 

You don’t have to worry about cold pool water! The water use for the pools is from an undergrown hot spring so the pools are always nice and warm. There are also a few temascales is like a natural vapor room. The water contains natural traces of magnesium, calcium, copper, silicon, aluminum, potassium, lithium, sodium, and sulfur. Effects of thermal water on the body, Increases body temperature killing germs and elimination toxins also increase the hydrostatic pressure of the body thereby increasing the blood circulation and oxygenation. The hotel has beautiful gardens and breathtaking views all around.

I can’t even tell you how amazing the food was. The hotel has its own restaurants and a home made ice cream stand. You can also travel out to Ajijic about 10min drive there are plenty of restaurants all with an amazing view of Lake Chapala. One bonus of Chapala is that there are quite a few different restaurants for everyone’s taste and preference. Here are some of my favorite restaurants and dishes we had:

El Globo for breakfast: I had the Chilaquiles and a cafe de hoya, Mia had the pancakes and orange juice. (this was across the street from the hotel about  3 min walk)

Frida for dinner: The restaurant had four different vegan tacos on handmade Tortillas and I just had to try all four with a pineapple agua, Mia had two vegan tacos. (The restaurant is in Ajijic about 10 min drive from the hotel)

If you’re wondering what to pack Chapala and the surrounding towns are very casual, but there are a few fancy restaurants. Honestly, I would just bring one bathing suits and cute comfy skirt. If your just stopping by and don’t have a bathing suit don’t worry they sell bathing suits at the corner of the hotel.

FYI I never travel without a tablet for Mia so she can watch her favorite cartoons, the tablet is pure magic on the plane. Amazon is offering a free trial that includes unlimited access to more than 16,000 kid-friendly books and videos for Free Time.
